Almond Crusted Chicken with Parsley-Basil Pesto



ALMOND CRUSTED CHICKEN 
MAKES 6 SERVINGS
Total Time: 41 min. • Prep Time: 25 min. • Cooking Time: 16 min.
CONTAINER EQUIVALENTS per serving: 1 Red  ½ Orange/Blue 1 tsp

Ingredients
6 (4-oz.) raw chicken breasts,
boneless,skinless
½ cup almond flour
2 cloves garlic, finely chopped
1½ tsp. finely grated lemon peel (lemon zest)
¼ tsp. sea salt (or Himalayan salt)
¼ tsp. ground black pepper
1 large egg, lightly beaten
¼ cup water
1 Tbsp. olive oil (or extra-virgin organic coconut oil)


Directions
1. Preheat oven to 425° F. (220° C.).

2 Place a chicken breast on a cutting board. Hold it flat with the palm of one hand and, with a chef’s
knife in the other hand, carefully slice it in half horizontally (parallel to the cutting board).
Repeat with remaining chicken.

3 Place each chicken breast half between 2 pieces of plastic wrap and pound with a mallet or tenderizer until ¼-inch thick (or about twice the original size).Set aside.

4 Combine almond flour, garlic, lemon peel, salt, and pepper in a shallow dish; mix well. Set aside.

5 Combine egg and water in a shallow dish;whisk to blend.

6 Dip each chicken breast into the egg mixture; dredge in almond flour mixture until evenly coated. Set aside.

7 Heat oil in large, ovenproof skillet over medium-high heat.

8 Add chicken breasts; cook for 3 to 4 minutes. Turn chicken.

9 Place skillet in oven; bake for 10 to 12 minutes, or until a thermometer inserted into the thickest part of each breast reads 165° F. (75° C.).

10 While chicken is baking, heat olive oil in medium skillet over medium heat.

11 Add vegetables, cook stirring frequently for 2 to 3 minutes or until tender-crisp.

12 Serve chicken with vegetables garnished with parsley (if desired).

CONTAINER EQUIVALENTS per serving:  1 Red  ½ Orange 1 tsp


Parsley-Basil Pesto
1/4 cup toasted pepitas (I could not find these so I used raw pumpkin seeds)
1/2 cup packed fresh basil leaves
1/2 cup packed fresh flat-leaf parsley leaves
Juice of one lemon
2 tablespoons water
1/4 teaspoon sea salt
1/4 cup EVOO
Blend in a mini food-prep and put on EVERYTHING!! Today I'm having it over raw zucchini noodles and tomatoes.

Slow Cooker and Spiced Apple Sauce


I turned this into a slow cooker recipe and put everything in the slow cooker on low for 6-8 hours.
I placed the apples on the bottom then the pork on top.

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Ingredients:
1 teaspoon salt
1 teaspoon black pepper
2 bone-in pork chops (about
1 pound total)
3 tablespoons cooking fat
1 onion, sliced
2 apples, peeled, cored and diced
1/2 cup apple cider
1/2 teaspoon ground ginger
1/2 teaspoon allspice
1 pinch nutmeg


Directions:

** If using the Crock pot place the sliced apples on the bottom then add the rest of the ingredients
or follow the steps below.

1. Preheat the oven to 350 degrees F.

2. Mix the salt and pepper in a small bowl and use to season both sides of the pork chops.

3. Melt 2 tablespoons of the cooking fat in a large skillet over medium-high heat. When the fat is hot, add the pork chops and sear until you see a golden brown crust, 2 to 3 minutes. Turn and sear the other side for 2 minutes.

4. Transfer the pork chops to a baking dish and roast in the oven until the internal temperature reaches 140 degrees F, 10 to 15 minutes, depending on thickness.

5. While the pork is roasting, combine the remaining 1 tablespoon fat and the onion in the same skillet. Cook over medium heat until the onion is translucent, 2 to 3 minutes. Add the apple, apple cider, ginger, allspice, and nutmeg. Cook (while scraping all the tasty bits off the bottom with a wooden spoon), until the apples soften, about 5 minutes.

6. Transfer the applesauce to a food processor or blender and blend until smooth. (I pulled the juice apples and onions out of the crock pot and placed it all into the blender)

 Top with the pork and serve with the applesauce.

Serves 2

I'm so beyond excited for you! This is truly the start of the NEW YOU!!

Sometimes we as Christian women think this food issue is a small one.  

After all, gluttony seems to be overlooked as an acceptable Christian sin, doesn’t it? 

We may consider this struggle as a small one compared to all the others – selfishness, pride, anger, money.  But small things can easily become big things, just like discussed in the compound effect!  Small things add up! Read more about the book Compound Effect by Darren Hardy HERE.

And as women, it’s usually BIG emotions that trigger our “little” food struggle.  Guilt, feelings of inadequacy, loneliness, anger, fear.  These things all strip us of peace.  And our real weight loss goal isn’t just a number on the scale, but it’s peace.  Peace with who I am in Christ.

So, as you go through this week and you’re faced with food choices, ask yourself this:, “Will this choice add to my peace or steal from it?”

 Dear Lord, Your peace is what I plead for today. I don’t want to focus on my food, a number on the scale, insecurity, or inadequacy.  I want my focus to be on You.  That is where I will find true peace.  In Jesus’ name, Amen. - Made to Crave Prayer


Fitness:
When I first started this journey when my alarm went off WAY TOO EARLY I use to say to myself to force me to get up..."I WANT TO CHANGE MORE THAN I WANT TO STAY THE SAME!" It is  what helped me get up every morning!

I can't even express how grateful I am to have found these challenge groups and have the opportunity to help others meet their own goals!

I love being a part of this, and I know you will too. SO..to maximize your results....

1. Post and participate daily!

2. Be in the moment in your life and your workout. It's therapy, I swear! Make the most of every workout. If that means you get up at 5 am...we are here with you!

3 Embrace the power of positive thinking. Encourage others. Love your body and STOP comparing it to others. There is no one in the world like you.

4. Smile. It makes you prettier. It attracts people toward you and makes them think their own positive thoughts!

Recipe of the Day: Slow Cooker BBQ Pork

This recipe is was one of the first two crock pot recipes I used when I first started my journey in January 2015.

I was a baker and my kitchen was always a mess.  By the end of the day I was "DONE" and did not want to clean up the desserts and then make dinner.

Crock Pot or Slow Cooker Meals really help saved the day for us.  I still use them to help with the busy afternoons of homework and sports practice!!  Give this one a try and let me know how your family likes it!  Make a big batch and freeze the leftovers for a quick and easy dinner in 2 weeks! ( I say 2 weeks because my husband doesn't like eating the same thing each week AND he also doesn't like things being frozen for too long - - so 2 weeks works for our family!)

What are your Triggers?


Faith:

I am so PUMPED for you ALL!!! PROMISE ME THAT YOU WILL DO YOUR PICS AND MEASUREMENTS!!! PLEASE PLEASE PRETTY PLEASE! I like to give small prizes for pictures!

Don't skip this step! Use today to be your final prep.

One thing I challenge you to pray over today is your “TRIGGERS.”  Specifically emotions and happenings that typically lead you to read for food instead truth:

·         Crazy car pool days
·         The scale that won’t seem to budge
·         A relationship that tears you down
·         Boredom…simple but it’s true!
·         Holidays or birthdays where you justify overeating


This is a change and just like anything different it takes time to get in your groove. But recognizing those common triggers and praying for release from them will go a long way!  Know that it will get easier each and every day and week!

The only way to negate an emotional eating trigger is to match it with truth.

The best thing to do during these TRIGGER moments is to PAUSE. Pause and ask ourselves...

"Do I want to eat this right now because I need nourishment or because I'm feeling empty emotionally or spiritually?"

Ephesians 3:17-19 says we can be rooted in love, we have the power to choose the truth, when we comprehend the love of Christ, we will be FILLED to the measure of the fullness - not that cookie - but of God.

 Dear Lord, please help me to battle each of my triggers today with truth.  Your truth.  Moment by moment.  I understand that food can fill my stomach but never my soul.  Only You can fill my soul and I am thankful for that.  In Jesus’s name, Amen. - Made to Crave Prayer

TIP: I usually eat the same breakfast, lunch & snacks every day of the week & just vary dinners. A lot of times I will have leftovers from dinner & that will be my lunch for the next day.

We are only one good choice away from being back on the path of perseverance.  But no matter how far off the path or how long we have been on it, God is patient with us and loves us as dearly beloved child – part of His family.

We are loved as God’s special girls!! No matter where you are in your struggle with healthy eating, God looks at you and says, “She still looks like my precious daughter to me.”  He loves you just the way you are.  But God loves you too much to leave you stuck in a state of defeat.  You were made for so much more.  You were made for victory!

“May the Lord direct your hearts into God’s love and Christ’s perseverance” (2 Thessalonians 3:5).

Other Scriptures about God's patience and Love
• God’s love never fails (1 Corinthians 13:8). Even if we feel that we are weak and failing, God’s love for us will never cease.
• Nothing can separate us from God’s love (Romans 8:39). Not twenty, fifty, one-hundred, two-hundred pounds, or more — nothing will separate you from God’s love.
• Love is patient (1 Corinthians 13:4). No matter how long we struggle to find victory in any area of our life, God is patient with us—continually providing His love, His comfort, His truth, and His power.
• God’s love is not based on our performance (Romans 5:8). We may fall off the path of perseverance, but God’s love has never been dependent on our actions, proven by the fact that He sent His son “while we were still sinners.”

UPDATE:
As yummy as this snack is I don't have it as much as I use too.
I have noticed dairy upsets my belly sometimes.  The healthier you eat the more you realize certain foods react differently to your body.

Perserverance

You know that the testing of your faith produces perseverance. Let perseverance finish its work. (JAMES 1:3 – 4A)

As we stop to consider the protection, the provision, and the process this trial brings us, we will find a measure of joy to perseverance.  Persevere – onward and upward, dear friend.

There just might be blessings ahead that we don't see now.

We not see the blessing right now...but they are there... this trial may be providing us with...
Protection - something that we can't see right now - our concern for health may turn into helping other (... mine did)

Provision - through the trial God provides new accountability friends that are like minded and want to be healthier or you may find you enjoy more healthier foods than you thought!

Process - There are no quick fixes.  LASTLY changes takes time! Anything that we are successful at, usually involves a plan, right? Read more below about meal planning!

 Dear Lord, even though I don’t always understand Your ways, I can find joy in Your protection, Your provision, and Your process.  I depend on Your strength to help me today.  In Jesus’ name.  Amen - Made to Crave Prayer

 So, grab a pen and a piece of paper and sit down and sketch out a meal plan. Make a grocery list, and then decide what day you are hitting up the grocery store. I have found that when I have a meal plan taped to the fridge, the food in my fridge, and my food prepped I am more likely to stick to it!

It’s so easy to wake up in the am and be late for work and still have to pack your lunch. We just throw our hands up and say we’ll just grab something for lunch!

Then, you end up making poor choices, eat more calories than you were supposed to and then feel guilty for your decision. So let’s stop that right from the get go! It starts with having a plan!!!

Make your meal plan for next week and post it to the group!  Don’t be intimidated by this! We are all here to learn from each other, so post and ask questions!

TIME TO DO THE DIRTY WORK! - MEAL PREP Quick tip! As soon as you get home from the store, wash and cut all fruits and veggies and place them in clear containers for easy access! Place them at eye level on your fridge so you have a quick, grab and go healthy snack!

On your healthy journey there will be times when you face trials.  You may not have considered them trials in the past.  But when you’re tempted to stray from the commitment to make healthier choices, it’s a trial.

 And today, we are talking more about the meal planning process! We aren't just focusing on our physical bodies, but also on our spiritual self!!

God CARES about what we put into these bodies He has given us… and why wouldn’t He???

So, let’s make a plan to starting putting good things into them! So much of our struggles can be mental.

Our ultimate Goal is peace - physically, emotionally and spiritually.

Moderation is Good, a planned treat meal is perfectly fine, but...

I know I’ve had those days when I planned for a salad at lunch and caved to the burger and fries in a moment of weakness. Moderation is good, and burgers and fries are not all bad. But if we budgeted/planned for a salad, we do better to stick with the plan!

IF we stick to the plan we will not have our tailspin of guilt, sadness, disappointment in ourselves and we will end up walking away from that meal feeling strong and victorious!

 Dear Lord, please help me when I feel tempted today.  Triumph in this trial matters to me, and I desire to persevere with Your guidance.  Help me to consider the joy and choose the better option.  In Jesus’ name, Amen. - Made to Crave Prayer
