2 lbs of lean ground turkey
1 cup Ezekiel bread crumbs
1 cup clean homemade salsa (recipe below)
2 large eggs, lightly beaten (or approx. 1 cup + 2 tbsp of egg whites for a healthier option)
4 cloves garlic, finely chopped
1 tbsp oregano, dried
1 tbsp thyme, dried
1 tbsp basil, dried
1 tbsp fresh parsley, washed, chopped and put in the meatloaf mixture
1 tsp salt
Ground black pepper,to taste
fresh parsley, washed and chopped, as garnish
fresh basil, washed and chopped, as garnish

Quick and Clean Blender Salsa
This MAKES A LOT – I make this every other week and use it quite often on eggs, salads and as a dip.Feel free to cut the recipe in half!
6 farm tomatoes
1 small onion
3 garlic cloves
1/2 to 1 jalapeno (depending on how spicy you like your salsa)
2 tsp honey
1 tsp salt
2 tsp cumin
Medium bunch cilantro, washed
juice of 2 lime
Put all ingredients in a blender or food processor and pulse until all ingredients are combined.
Sometimes I throw in some Hatch Green Chili’s if they are in season! YUM!!
Directions for Meatloaf:
Preheat oven to 375 degrees.
Combine turkey, bread crumbs, salsa, eggs, spices, garlic, salt, parsley and pepper in large bowl
Add mixture to a loaf pan
Bake for about 1 hour or until center of meat is cooked to 165°F
Cut into 8 slices and serve with parsley, basil and fresh salsa on top.
