I’m trying to find some healthy and clean desserts that my family can enjoy. We tried this recipe and one of my boys LOVED them and the other one didnt’ think they were sweet enough! (But remember they are use to all my Sweet Shindigs desserts being around the house and these are a lot less sweet).
Also, the first batch I accidentally over filled and baked too long. It is a short baking time!
Here is the recipe:
Double Chocolate Protein Muffin- Tops
2.5 scoops Chocolate Protein Powder
1 teaspoon Baking Powder
4 TBSP Unsweetened Cocoa Powder
1.5 TBSP Cocoa Powder
3 Egg Whites
1/2 can of Pumpkin Puree
1 teaspoon Vanilla Extract
1 banana, ripe
coconut spray, grease pan
Preheat the oven to 375 degrees and spray a 12 slot whoopie pan with coconut spray
Mix dry ingredients in one bowl
Mix wet ingredients in one bowl
Now, pour wet ingredients into dry and mix well
Pour evenly into tins and do not overfill they will expand quite a bit
Bake for 7-8 minutes or until the batter is cooked through.
Be careful not to overcook these or they will be very dry.
