Okay…THIS was SO yummy! It was the first time I made Butternut Squash. I bought it for a recipe I am making tonight…but knew I had plenty to make this recipe just for me at lunch time! It was SO good!
Clean Eating Butternut Squash
1 whole grain tortilla* Try Food for Life Sprouted Grain Tortilla or Pita Bread
1/2 cup shredded cheese* If doing the Fix Containers use ONLY a Blue container full
1/2 cup cooked butternut squash, blended smooth with a bit of honey to taste.
0% Fage Plain Non-Fat Greek Yogurt, topping
Chop up the Butternut Squash in small cubes
Spray pan with Coconut Spray
Place cubed butternut squash into the pan with about 1/2 cup of water and cover with a lid
Add water if you need to
Once tender place into a blender and blend until smooth
Add honey if you want *I did not because I wanted to follow the Fix Nutritional Plan
Add the tortilla to the pan * I used Food for Life Whole Wheat Pita Pocket because that is what I had on hand.
Simply spread some squash over the tortilla , top with cheese, and add another tortilla on top
Flip over and cook evenly on both sides
Cut and Enjoy!
I paired mine with 0% Fage Plain Non-Fat Greek Yogurt about 2 TBSP worth
** sometimes I add HEB No Preservative In-House Turkey lunch meat to the Quesadilla
You could pop it in the oven at 350°F
You could put it in the microwave, but trust me. It doesn’t turn out very tasty that way.
