This is a GREAT option when you just don’t have any Yellows left at the end of the day when using the 21 Day Fix Nutritional Eating Plan!
1/4 c Chicken Stock
1/2 tsp Garlic Powder
Salt, to taste
Pepper, to taste
Chop up a head of cauliflower and place in a food processor
Pulse it until it turns into particles resembling rice – this should happen pretty quickly
Turn on a cooktop burner to medium to medium-high heat
In a medium-sized pan add the cauliflower “rice”
Get some of the chicken broth about 1/4 cup – and add to rice
Add 1/2 tsp of garlic powder
The cauliflower contains a lot of moisture – you’ll notice it will start to steam in the pot
Just watch it and stir occasionally as it cooks. Continue cooking for 10-12 minutes
Taste the cauliflower rice for consistency
Once the rice is done and salt and pepper to taste
I would fill up a Red and COUNT it as a GREEN
(When you ground it up like rice you get so much more per volume than you would just by chopping it up and adding it to the container.
