1 Medium Eggplant
1 lb. ground chicken breast (I used ground Turkey Meat)
2c grated zucchini (leave peel on)
2-3 green onions, sliced
3-4 Tbsp cilantro, minced
1 clove garlic
1 tsp salt
½ tsp pepper
(optional: ¾ tsp cumin)
red pepper, sliced
olive oil, for cooking (I USED coconut oil spray)
Preheat oven to 400 degrees
Peal Eggplant skin of and slice. Sprinkle with salt for and let sit for about 15-20mins then rinse off all the salt. This helps take the bitter taste out of the eggplant that is sometimes present.
Place the slices of Eggplant on a baking sheets sprayed with coconut oil spray)
Cook for 4 mins on each side or until tender
Toss chicken or turkey with zucchini, green onion, cilantro, garlic, salt, and pepper (and cumin, if using).
Mixture will be quite wet.
Form into burger patties.
To burgers cook on the stovetop:
Heat a drizzle of olive oil in a medium pan over medium heat. Use a small scoop or a heaped tablespoon to scoop meatballs into the pan. Cook 8-10 at a time for about 5-6 minutes on the first side. Flip and cook an additional 4-5 minutes, or until golden brown and the centers are cooked through.
Once burgers are cooked add the onions and red pepper slices to the pan and saute until tender. You may been to add a little more coconut oil spray so the food does not stick
