Oh man, this totally hit the spot after a tough Dirty 30 workout in the hot garage at 2pm in the afternoon. Yummy, cool and refreshing.
The boys were snacking on watermelon when I got done and just thought a watermelon salad sounded pretty good. I found a few online and they had feta cheese in the recipe, but I decided to omit it and have something with just fruit and veggies.
I tend to have a healthy fat here and then a healthy fat there and before I know it I’ve had too much for the day, so leaving out the cheese was a good option for me and an add on on days where I have room on my nutritional plan. Whether or not you count your macros or your containers you still should stay in your limits. Healthy Fats are a blue container under the meal plan that I follow.
Watermelon and Cucumber Salad
Serving Size: 1
1 cup watermelon, diced
1 cup cucumbers, diced
2 tbsp red onion, diced
2 tbsp fresh mint, chopped
1 tsp olive oil
juice of fresh lime
Himalayan salt, to taste, sprinkled on top
Chop all ingredients and mix up with olive oil and lime juice.
