I read about this Tray Dinner where you put everything on one baking sheet and then plate. Super easy right!! It was pretty easy and super yummy. This girl loves butternut squash!
Chicken, Butternut Squash Arugula Salad
2 tsp. olive oil
2 tsp. coconut aminos
2 chicken breasts
1 cup butternut squash, cut into small cubes
1/2 yellow onion, sliced
4 sprigs fresh thyme
2 springs Rosemary
Pinch Himalayan salt
2 cups arugula
– Preheat oven to 375 Degrees
– Place Chicken, sliced onions and butternut squash cubes on a baking sheet.
– Drizzle olive oil and coconut aminos all of it
– Sprinkle salt, pepper, rosemary and thyme
Cook for about 30 mins
butternut squash tender and Chicken at 165 Degrees
Plate with arugula, then add butternut squash onions and sliced chicken.
